Traditionally, various oils were applied with a brush to single cut layers of seaweed laver over charcoal embers. For thousands of years, Gim (the Korean word for edible seaweed) was originally difficult to harvest as collectors would gather them from rocks or driftwood and subsequently reserved for royalty.
From the 17th-19th century, new modernization techniques for both cultivation and preparation were combined, leading Gim to become a staple in Eastern Asian cuisine which is now rapidly expanding in scope and popularity all over the world.
Gim is known to thrive in sea water between 4-8° C, typically harvested in the months of December and January (~50 days of growth is considered to be the period for peak optimal flavor and color).
